Preparation:
1. After washing them thoroughly, cut the squid into rounds and place them in a bowl.
2. Add the baking soda and water/soda.
3. Let them soak for 15-30 minutes.
4. Rinse under running water, then dredge them in flour.
5. Before frying, rinse them in a solution of equal parts water and vinegar.
6. Fry in boiling oil for 1-2 minutes, drain well, and season with salt.
