Oven Roasted Smoked Sausage and Potatoes

Preheat your oven to 400°F (200°C).

Line a generously sized baking tray (with raised sides) with multiple sheets of foil, and apply a light coating of cooking spray. Set aside for later use.

In a large mixing bowl, combine the sliced sausage rounds, chopped onions, and cubed potatoes. Drizzle the mixture with a couple of tablespoons of olive oil, then season to your liking with salt, pepper, paprika, and dried thyme. Use your hands to toss the ingredients thoroughly, ensuring an even distribution of the seasonings. Transfer this mixture onto the prepared baking tray, spreading it out as much as possible.

Place the tray into the preheated oven and roast for approximately 45 minutes to an hour. Stir the contents every 15 minutes to ensure even cooking, and continue roasting until the potatoes achieve a desirable golden brown hue and tenderness. Once done, turn off the oven.

Sprinkle the grated cheese over the cooked sausage and potatoes. Return the tray to the oven for a few additional minutes to allow the cheese to melt and create a luscious topping.
