Potato and Minced Meat Skillet with Dill Mustard Sauce

Brown the Meat: Heat olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off excess grease.
Sauté Vegetables: Add onion and garlic to the skillet and cook until softened, about 5 minutes.
Add Potatoes and Seasonings: Add cubed potatoes, beef broth, thyme, paprika, salt, and pepper to the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until potatoes are tender.
Make the Sauce: While the potatoes are cooking, whisk together mayonnaise, Dijon mustard, chopped dill, lemon juice, salt, and pepper in a small bowl.
Serve: Serve the potato and meat skillet immediately, topped with the dill mustard sauce.
