Add Mustard (Optional): If using mustard, spread a thin layer over the puff pastry, leaving a border of about 1 inch around the edges.
Layer Ham and Cheese: Evenly distribute the sliced ham over the mustard (or directly on the pastry if not using mustard). Sprinkle the shredded cheese evenly over the ham.
Season and Roll: Season with freshly ground black pepper. Carefully roll up the puff pastry from one of the long sides to form a log. Pinch the seams and ends to seal the strudel.
